This book gathers together over 1000 recipes which are divided into the following headings: soups, salads, vegetables, rice and pasta, produce, eggs, shellfish, oils, sauces and vinaigrettes, fish, meat and deserts. This recipe book collects traditional, national and international recipes, as well as new creations in fast, simple cooking. If you don’t know anything about cooking this book is for you, if you do have an idea, it also for you since it will introduce you to a great range of recipes; and if you are an “advanced sauce maker” you will enjoy some of the more advanced yet easy to prepare recipes. You will find simple recipes explained easily and sometimes accompanied by drawings to help you understand what we are talking about. There are also some ideas for those chefs at home who have greater expertise.
You can substitute lettuce for tomato, melon for mango or oregano for parsley and… nothing happens. Sorry, yes, something does happen: it becomes different, but not worse. We provide you with correct proportions so that you follow them at the beginning and when you are feeling more confident, you can disregard them and create your own variations. But that will come later on…for now, I’m content to see the book getting worn and covered with oil stains which I take to be an unmistakable sign that you like it and are benefiting from it. Enjoy it!
